I’ve listened back and forth a few times and finally decided I could better justify voting for #1. It comes across a bit more genuine to me, in perhaps an old-fashioned kind of way. One man and his (one) guitar. Powerful!

Here’s what I would do. Use BOTH versions, in a compromise. So have it basically with just 1 guitar, then have a place or two in the song where you bring in the army, then back off again. I think the contrast would be more impactful that way. Too much wankery throughout is not good. And you want to highlight how hard you can rock with just one guitar too, and THEN it’s even more effective when the wall of sound rips it up…
